Nigerian coconut rice is prepared by soaking white rice in coconut milk or cooking it with coconut flakes.

- Coconut oil
- Red onion, sliced
- Curry powder
- Chopped tomatoes (optional)
- Salt
- Tatashe (red bell pepper), chopped
- Ground crayfish
- Stock cube
- Sweet pepper
- Coconut milk
- Uncooked rice, rinsed

Procedure[edit | edit source]
- Heat the coconut oil in a pot. Add the sliced onion, and fry until it loses color.
- Add the curry powder, chopped tomatoes, pepper, salt, tatashe, crayfish, stock cube, and sweet pepper. Stir, and cook for 5 minutes.
- Stir in the coconut milk and rice. Cook for about 45 minutes, until the rice is tender.
- Serve with either roasted chicken, fried fish, or beef.
