Nigerian curry sauce is sort of stew made with curry powder, meat, and vegetables. It can be eaten alone but can also be combined with rice, potato, bread, and more.

- Cornstarch
- Beef
- Nigerian curry powder
- Seasoning cubes
- Salt
- Vegetable oil
- Onion, sliced
- Garlic, sliced
- Ginger, minced
- Carrot, chopped
- Green pepper, chopped
- Green beans, trimmed
- Hard-boiled egg, peeled

- Frying pan
- Pot
- Knife
- Chef spoon
Procedure[edit | edit source]
- Mix cornstarch with water to make a slurry and set aside.
- Wash the beef and cut into small pieces. Season with curry powder, seasoning cube, and salt.
- Heat a thin layer of vegetable oil in a pot. Add the beef and fry until brown. Remove the meat and set aside.
- Add onion, garlic, ginger, and curry powder to the pan. Stir fry for 2 minutes.
- Return the beef to the pot. Season with seasoning cubes, then add a small amount of water. Cover the pot and simmer until the beef is tender.
- Stir in the carrots, peppers, green beans, and hard-boiled egg. Simmer for a few minutes until the vegetables are tender.
- Stir in the cornstarch slurry, and cook for 2 minutes until thickened.
- Serve with rice, potatoes, and/or bread.
