Nigerian pasta salad is a simple cold dish of pasta tossed with meat and vegetables.
Ingredients

- Salt
- Mayonnaise
- Vinegar (optional)
- Sugar or honey (optional)
- Ground black pepper
- Hard-boiled eggs, peeled and chopped
- Bell pepper, chopped
- Carrot, chopped
- Cucumber, chopped
- Cooked chicken, cut in small pieces

[edit | edit source]- Cook the pasta in salted boiling water until it's firm to the bite. Do not overcook, or the pasta will be mushy.
- Drain the pasta and reserve it.
- Combine the mayonnaise, vinegar, and sugar in a mixing bowl. Season to taste with salt and pepper.
- Add the pasta, egg, peppers, carrots, cucumbers, and chicken. Toss well to coat everything with the dressing.
- Serve or keep in the fridge.
